For Chocolate Ganache 
(Optional, but highly recommended):
High-quality dark chocolate (60-70% cacao), finely chopped8 ounces (225 grams)
Heavy cream1 cup (240 ml)
Unsalted butter, softened1 tablespoon (15 grams)

Cooking Steps

Preparation (Before Mixing)

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch (23 cm) round cake pans, or line the bottoms with parchment paper and then grease and flour the sides.

 Making the Cake Batter

  1. In a large mixing bowl, sift together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, baking powder, and salt. Whisk these dry ingredients together thoroughly to ensure they are well combined.
  2. In a separate medium bowl, whisk together the room temperature eggs, buttermilk, vegetable oil, and vanilla extract.
  3. Pour these wet ingredients into the dry ingredients and mix on medium speed with an electric mixer (or vigorously with a whisk) for about 2 minutes, until the batter is smooth and well combined. The batter will be quite thick at this stage.
  4. Carefully stir in the hot coffee or hot water. The batter will become very thin and runny – this is completely normal and expected, as the hot liquid "blooms" the cocoa powder, enhancing its flavor and making the cake incredibly moist. Stir until just combined; do not overmix.

Baking the Cake

  1. Divide the thin batter evenly between the two prepared cake pans.
  2. Bake in the preheated oven for 30-35 minutes, or until a wooden skewer or toothpick inserted into the center of the cakes comes out clean or with only a few moist crumbs attached.
  3. Let the cakes cool in their pans for 10-15 minutes on a wire rack.
  4. After cooling slightly in the pans, invert the cakes onto the wire rack to cool completely. Do not try to frost warm cakes!

 Making the Chocolate Ganache (Optional)

  1. While the cakes cool, if using, prepare the ganache. Place the finely chopped dark chocolate in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (you'll see small bubbles around the edges).
  3. Remove from heat and pour the hot cream over the chopped chocolate. Let it sit for 5 minutes without stirring.
  4. After 5 minutes, gently whisk the mixture from the center outwards until it is completely smooth and glossy.
  5. Stir in the softened butter until fully incorporated.
  6. Let the ganache cool at room temperature for about 30-60 minutes, stirring occasionally, until it thickens to a spreadable consistency.

Assembling and Serving

  1. Once the cakes are completely cool, frost them with the chocolate ganache, your favorite buttercream, or a simple dusting of powdered sugar.
  2. Slice and serve!
