Classic New York Style Cheesecake Recipe

Cooking Steps

Part 1: Prepare the Crust

  1. Preheat your oven to 350°F (175°C). Arrange an oven rack in the lower third of the oven.

  2. In the bowl of an electric mixer fitted with the paddle attachment (or using a hand mixer), cut the room temperature cream cheese into chunks and beat on medium speed for about 4 minutes until it's completely smooth, soft, and creamy with no lumps.   3. Add the granulated sugar to the cream cheese and beat for another 4 minutes until well combined and fluffy, scraping down the bowl as needed.
  4. Add the all-purpose flour, vanilla extract, and lemon zest to the mixture. Beat on low speed until just incorporated, scraping the bowl.
  5. Add the eggs, one at a time, mixing on low speed for only about 30 seconds after each addition, just until incorporated. Do not overmix the eggs, as this can incorporate too much air, leading to cracks. Scrape the bowl after each egg.
  6. Finally, add the room temperature sour cream and room temperature heavy cream. Mix on low speed until just incorporated and the batter is uniform. Again, avoid overmixing. The batter should be smooth but not overly airy.

Part 3: Bake and Chill the Cheesecake

  1. Pour the cream cheese filling into the cooled, foil-wrapped springform pan, over the baked graham cracker crust. Smooth the top with a rubber spatula.
  2. Place the foil-wrapped springform pan into a large, high-sided roasting pan.
  3. Carefully pour boiling water into the roasting pan, ensuring the water comes about halfway up the sides of the springform pan (around 1-1.5 inches). Be careful not to splash water into the cheesecake.
  4. Carefully transfer the roasting pan with the cheesecake to the preheated oven (325°F/160°C).
  5. Bake for 1 hour and 30 minutes (90 minutes). The cheesecake is done when the edges are set and firm, but the very center (about a 2-3 inch circle) still has a slight wobble or jiggle when you gently shake the pan.
  6. Cooling (Crucial for Crack Prevention): Once baked, turn off the oven but do not open the oven door. Prop the oven door open about 1 inch with a wooden spoon or oven mitt. Let the cheesecake cool in the oven for 1 hour as the oven slowly cools down. This slow cooling helps prevent cracks.
  7. After 1 hour, remove the cheesecake from the oven and carefully lift it out of the water bath. Remove the foil wrapping.
  8. Let the cheesecake cool completely on a wire rack at room temperature for another 1-2 hours.
  9. Once completely cool at room temperature, gently cover the top of the cheesecake with plastic wrap (without it touching the surface) or foil.
  10. Chill the cheesecake in the refrigerator for a minimum of 6 hours, but ideally overnight (8-12 hours). This is crucial for the cheesecake to fully set, firm up, and develop its classic dense, creamy texture.

Part 4: Serve

  1. Before serving, run a thin, sharp knife around the edge of the cheesecake (between the cheesecake and the pan) to loosen it. Release the springform pan sides.
