Cooking Steps

Prepare the Lobster:
  1. If using frozen lobster tails, thaw them slowly in the refrigerator overnight, or under cold running water for 30-60 minutes.
  2. Using kitchen shears or a sharp knife, cut along the top of the lobster shell lengthwise down the center, from the head end to the tail, being careful not to cut through the meat entirely.
  3. Gently open the shell and pull the meat upwards, letting it sit on top of the shell (like a "butterfly tail" or "piggyback").
  4. Remove any dark vein running along the meat (the digestive tract) if present.
  5. Pat the lobster tails very dry with paper towels.

Make the Lemon-Garlic Butter:

  1. In a small saucepan over low heat, melt the butter.
  2. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to brown or burn it.
  3. Remove the pan from the heat. Squeeze in the juice from half to one full lemon, add a pinch of lemon zest (optional, for extra citrus punch), and half of the freshly ground black pepper. Stir well.
Grill or Broil the Lobster:
  1. For Grilling: Preheat your grill to medium-high heat. Brush the lobster meat generously with the lemon-garlic butter. Place the lobster tails meat-side down on the grill for 3-5 minutes, then flip them over to shell-side down. Continue to baste the meat with more butter as it cooks. Grill for another 5-8 minutes, or until the meat is opaque and firm.
