Grated Parmesan Cheese (optional)¼ cup
Dried Oregano½ teaspoon

Black Pepper½ teaspoon
Olive Oil1-2 tablespoons
For the Classic Red Sauce:
Olive Oil1 tablespoon
Yellow Onion1 large, finely chopped
Garlic Cloves3-4, minced
Tomato Paste2 tablespoons
Crushed Tomatoes1 (28-ounce / 794g) can
Tomato Sauce (optional)1 (15-ounce / 425g) can
Beef or Chicken Broth½ cup (120 ml)
Dried Oregano1 teaspoon
Dried Basil1 teaspoon
Bay Leaves2
Sugar (optional)½ - 1 teaspoon
Salt½ teaspoon
Black Pepper¼ teaspoon

Cooking Steps

Step 1: Prepare the Meatball Mixture

  1. In a large mixing bowl, combine the breadcrumbs and milk. Let it sit for 5 minutes to allow the breadcrumbs to absorb the milk.
  2. Add the ground meat, lightly beaten egg, grated onion, minced garlic, chopped fresh parsley, grated Parmesan cheese (if using), dried oregano, salt, and black pepper to the bowl with the breadcrumb mixture.
  3. Using clean hands (or a spoon), gently mix all the ingredients until just combined. Do not overmix, as this can lead to tough meatballs.

Step 2: Form and Brown the Meatballs

  1. Roll the meat mixture into balls, about 1 ½ - 2 inches (4-5 cm) in diameter. You should get 18-24 meatballs.
  2. Heat 1-2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Working in batches if necessary, add the meatballs to the hot oil and sear until golden brown on all sides (about 2-3 minutes per side). They don't need to be cooked through at this stage.
  4. Remove the browned meatballs from the pot and set them aside on a plate.

Step 3: Make the Red Sauce

  1. Reduce the heat to medium. If needed, add a touch more olive oil to the pot.
  2. Add the finely chopped onion to the pot and sauté for 5-7 minutes until softened and translucent.
  3. Add the minced garlic and tomato paste. Cook for another 1-2 minutes, stirring constantly, until fragrant and the tomato paste darkens slightly.
  4. Pour in the crushed tomatoes (and tomato sauce if using) and the beef or chicken broth.
  5. Stir in the dried oregano, dried basil, bay leaves, sugar (if using), salt, and black pepper. Bring the sauce to a gentle simmer.

Step 4: Simmer Meatballs in Sauce

  1. Carefully add the browned meatballs back into the simmering red sauce.
  2. Reduce the heat to low, cover the pot partially (leaving a small gap for steam to escape), and let the sauce and meatballs simmer for at least 30-45 minutes, or until the meatballs are cooked through and tender.

    • For deeper flavor, you can simmer for up to 1.5 - 2 hours, stirring occasionally.

Step 5: Finish and Serve

  1. Remove the bay leaves from the sauce.
  2. Taste the sauce and adjust seasonings (salt, pepper, sugar) if necessary.
  3. Serve the Homemade Meatballs with Classic Red Sauce hot. They are perfect over spaghetti or other pasta, in meatball subs, or alongside polenta or mashed potatoes. Garnish with fresh chopped parsley and extra grated Parmesan cheese (if desired).

Extra Tips for Perfect Meatballs

  • Don't Overmix: Overmixing meatball mixture makes them tough. Mix until just combined.
  • Moisture is Key: The milk and grated onion help keep the meatballs juicy and tender.
  • Browning Adds Flavor: Searing the meatballs before simmering adds a crucial layer of flavor and helps them hold their shape. You can also bake the meatballs on a baking sheet at 200°C (400°F) for 15-20 minutes until browned if you prefer to avoid frying.
  • Freezing: Meatballs (cooked or uncooked) freeze very well. Freeze cooked meatballs in sauce, or freeze browned (but uncooked) meatballs on a tray, then transfer to a freezer bag once solid.
  • Meat Combination: A mix of ground beef and ground chicken or turkey can add complexity to the flavor and texture of your meatballs.
