Cooking Steps

Step 1: Prepare the Cucumbers

  1. Wash the cucumbers thoroughly.
  2. Trim off the blossom end (the end opposite the stem) of each cucumber, as it contains an enzyme that can make pickles soft.
  3. Slice the cucumbers to your desired shape:
    • Rounds: About ¼ inch (0.5 cm) thick for sandwich slices.
    • Spears: Cut small cucumbers in half lengthwise, then halve again.
    • Chips: Halve lengthwise then slice into chunky half-moons.

Step 2: Prepare the Jars

  1. Wash two 16-ounce (pint) glass jars with lids thoroughly with hot, soapy water. Rinse well. Sterilizing is not strictly necessary for refrigerator pickles, but ensuring they are very clean is important.

Step 3: Pack the Jars

  1. Divide the fresh dill sprigs, smashed garlic cloves, mustard seeds, black peppercorns, and red pepper flakes/coriander seeds (if using) evenly between the two clean jars.
  2. Pack the sliced or speared cucumbers tightly into the jars, leaving about ½ inch (1-1.5 cm) of headspace from the rim. Try to pack them snugly to prevent them from floating too much.

Step 4: Make the Brine

  1. In a small saucepan, combine the water, white vinegar, salt, and granulated sugar (if using).
  2. Bring the mixture to a boil over medium-high heat, stirring until the salt and sugar are completely dissolved.

Step 5: Pour Brine and Seal

  1. Carefully pour the hot brine over the cucumbers in the jars, ensuring the cucumbers are fully submerged. Gently tap the jars on the counter to release any air bubbles. If needed, top off with a bit more hot water or brine.
  2. Place the lids on the jars and screw them on tightly.

Step 6: Cool and Refrigerate

  1. Let the jars cool completely to room temperature on your counter (this could take 1-2 hours).
  2. Once cooled, transfer the jars to the refrigerator.

Step 7: Pickle and Enjoy!

  1. The pickles will be ready to eat in about 24 hours, but their flavor will deepen and improve over 2-3 days.
