Cooking Steps

Step 1: Prepare the Egg & Cheese Mixture

  1. In a medium-sized bowl, whisk together the whole egg and the egg yolks until well combined and slightly frothy.
  2. Add the freshly grated Pecorino Romano cheese and a generous amount of freshly cracked black pepper (at least ½ teaspoon). Whisk vigorously until you have a thick, cohesive, and smooth paste. Set this bowl aside.

Step 2: Cook the "Bacon"

  1. Dice the chicken bacon or turkey bacon into small pieces (about ¼ to ½ inch).
  2. Place a large, deep skillet (preferably non-stick or cast iron) over medium heat. Add the diced "bacon" and cook slowly, stirring occasionally, until it's golden brown and crispy. This can take 7-10 minutes.
  3. As it cooks, the fat will render out. If your chicken/turkey bacon is very lean and not rendering much fat, add 1 teaspoon of olive oil to the pan to help it crisp up.
  4. Once crispy, use a slotted spoon to transfer the cooked bacon pieces to a paper towel-lined plate to drain, leaving the rendered fat (or olive oil) in the skillet. Turn off the heat under the skillet for now.

Step 3: Cook the Spaghetti

  1. Bring a large pot of heavily salted water to a rolling boil. The water should taste like the sea.
  2. Add the spaghetti to the boiling water and cook according to package directions until al dente (cooked through but still firm to the bite).
  3. Before draining, reserve about 1 to 1.5 cups of the starchy pasta cooking water. This water is crucial for creating the creamy sauce.
  4. Drain the spaghetti quickly. Do not rinse the pasta.

Step 4: Combine and Create the Sauce (The Carbonara Magic!)

  1. Immediately transfer the hot, drained spaghetti directly into the skillet with the reserved bacon fat (and/or olive oil).
  2. Add a ¼ cup of the reserved hot pasta cooking water to the skillet with the pasta. Toss vigorously with tongs to coat the pasta in the fat and starchy water. The heat from the pasta and water will start to create a preliminary emulsion.
  3. Crucially, remove the skillet completely from the heat. The residual heat of the pasta and pan is what will cook the eggs, not direct heat, which would scramble them.
  4. Slowly pour the egg and cheese mixture over the hot pasta, while simultaneously tossing the pasta very vigorously and continuously with tongs. The constant motion, combined with the heat of the pasta, will emulsify the eggs and cheese into a creamy, glossy sauce that coats every strand of spaghetti.
  5. If the sauce looks too thick or dry, add more of the reserved pasta cooking water, one tablespoon at a time, continuing to toss vigorously, until you achieve a luscious, smooth, and creamy consistency.
  6. Add the crispy cooked chicken bacon or turkey bacon back into the pasta and toss to combine.
  7. Add more freshly cracked black pepper to taste.

Step 5: Serve Immediately

  1. Divide the Spaghetti Carbonara among warmed serving bowls.
  2. Serve immediately with extra grated Pecorino Romano cheese and a final crack of black pepper, if desired. Carbonara is best enjoyed fresh, as the sauce can thicken considerably as it cools.
