Ingredient

Fresh Large Oysters18-24 (medium to large)
Rock Salt or Coarse Sea Salt3-4 cups
Unsalted Butter6 tablespoons (¾ stick)
Shallots, minced2 medium
Garlic Cloves, minced3
Fresh Spinach, packed5 oz (approx. 5 cups loose)
Fresh Parsley, chopped¼ cup
Fresh Chives, chopped2 tablespoons
Breadcrumbs (Panko or fresh soft)¼ cup
Parmesan Cheese, grated¼ cup
Lemon Juice, fresh squeezed1 tablespoon
Hot Sauce (e.g., Tabasco)½ - 1 teaspoon

Cooking Steps

Step 1: Prepare the Oysters

  1. Clean Oysters: Scrub the oysters thoroughly under cold running water to remove any dirt or grit from their shells.
  2. Shuck Oysters: This is the most challenging part.

  • Hold the oyster firmly in a thick towel or a shucking glove, cupped side down, with the hinge (pointy end) facing you.
  • Insert the tip of the oyster knife into the hinge. Twist the knife until you hear a pop, indicating the hinge has opened.
  • Run the knife along the top shell to separate it from the oyster. Discard the top shell.
  • Carefully slide the knife under the oyster meat to detach it completely from the bottom shell, making sure to retain all the natural oyster liquor (juice).
  • Place the shucked oysters, still in their deep half-shells with their liquor, onto a baking sheet filled with a thick layer of rock salt. The salt helps stabilize the shells and prevent them from tipping over and spilling the precious liquor. Keep the oysters in the refrigerator while you prepare the topping.

Step 2: Prepare the Rockefeller Topping

  1. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat.
  2. Add the minced shallots and cook for 2-3 minutes until softened.
  3. Add the minced garlic and cook for another minute until fragrant (do not let it brown).
  4. Add the packed fresh spinach to the skillet. Cook, stirring frequently, until the spinach wilts down completely and any liquid has evaporated, about 3-5 minutes.
  5. Transfer the cooked spinach mixture to a cutting board. Once slightly cooled, finely chop it (or pulse briefly in a food processor, but don't over-process into a paste).
  6. In a medium bowl, combine the finely chopped spinach mixture, remaining 4 tablespoons softened unsalted butter, ¼ cup fresh chopped parsley, 2 tablespoons fresh chopped chives, ¼ cup breadcrumbs, ¼ cup grated Parmesan cheese, 1 tablespoon fresh lemon juice, ½ - 1 teaspoon hot sauce, optional ⅛ teaspoon anise extract, ½ teaspoon salt, and ¼ teaspoon white pepper.
  7. Mix everything together thoroughly until well combined.

Step 3: Assemble and Bake the Oysters

  1. Preheat your oven to 220°C (425°F). You can also use a broiler for the last few minutes for extra browning if preferred.
  2. Take the baking sheet with the shucked oysters from the refrigerator.
  3. Spoon a generous amount (about 1.5-2 tablespoons, depending on oyster size) of the Rockefeller topping over each oyster, covering the meat evenly.
  4. Place the baking sheet in the preheated oven.
  5. Bake for 10-15 minutes, or until the oyster edges begin to curl slightly, the topping is golden brown and bubbly, and the oysters are cooked through. If using a broiler, finish under the broiler for 1-2 minutes until beautifully browned (watch carefully as it can burn quickly).

Step 4: Serve

  1. Carefully remove the baking sheet from the oven.
  2. Serve the Classic Oysters Rockefeller immediately directly from the baking sheet (or arrange on a serving platter).
  3. Garnish with extra fresh parsley and serve with fresh lemon wedges for squeezing over each oyster.

Extra Tips for Perfect Oysters Rockefeller

  • Freshness is Absolute Key: As with any raw or minimally cooked seafood, the quality and freshness of your oysters are paramount. Buy them from a reputable fishmonger.
  • Shucking Safety: Always use an oyster shucking knife and a protective glove or a very thick towel to protect your hand. If you're new to shucking, consider asking your fishmonger to shuck them for you, or watch a few online tutorials.
  • Don't Overcook: The goal is plump, tender oysters, not rubbery ones. Watch them carefully; they cook quickly under high heat.
  • Liquor is Flavor: Try to retain as much of the oyster's natural liquor in the shell as possible, as it adds a wonderful briny flavor to the dish.
  • Anise Flavor: The original Oysters Rockefeller recipe is believed to have included absinthe or Pernod (anise-flavored liqueurs). If you prefer to avoid alcohol entirely, a tiny drop of anise extract can provide a similar aromatic note. If you don't have it, the dish will still be delicious due to the other strong flavors.
