Ingredients

For the Whole Roasted Chicken:

Whole Chicken3-4 lbs (1.4-1.8 kg)
Olive Oil1-2 tablespoons
Salt1 teaspoon
Black Pepper½ teaspoon
Paprika1 teaspoon
Garlic Powder½ teaspoon
Onion Powder½ teaspoon
For the Savory Rice and Vegetable Stuffing:
Long-Grain White Rice1 cup (180g)
Chicken or Vegetable Broth1.5 cups (360 ml)
Olive Oil1 tablespoon
Yellow Onion1 small, finely diced
Celery Stalk1, finely diced
Carrot1 medium, finely diced
Bell Pepper (any color)½, finely diced
Mushrooms (optional)½ cup, finely diced
Garlic Cloves2, minced
Fresh Parsley, chopped¼ cup
Dried Thyme½ teaspoon
Dried Rosemary (optional)¼ teaspoon, crushed
Salt½ teaspoon
Black Pepper¼ teaspoon

Cooking Steps

Step 1: Prepare the Rice and Vegetable Stuffing

  1. Partially cook the rice: In a medium saucepan, combine the rinsed long-grain white rice with 1.5 cups chicken or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 8-10 minutes (the rice should be partially cooked, still firm, but not fully done). Remove from heat and fluff with a fork. Let it cool slightly.
  2. Sauté vegetables: While rice cools, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the finely diced onion, celery, carrot, and bell pepper. Sauté for 5-7 minutes until softened.
  3. Add the optional finely diced mushrooms and minced garlic. Sauté for another 3-4 minutes until mushrooms are tender and garlic is fragrant.
  4. In a large bowl, combine the partially cooked rice, sautéed vegetables, fresh chopped parsley, dried thyme, optional dried rosemary, ½ teaspoon salt, and ¼ teaspoon black pepper. Mix well.

Step 2: Prepare the Chicken

  1. Remove giblets and neck from the whole chicken cavity. Pat the chicken very dry inside and out with paper towels.
  2. Season the inside cavity of the chicken lightly with salt and pepper.
  3. In a small bowl, mix 1 tablespoon olive oil (or melted butter), 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon paprika, ½ teaspoon garlic powder, and ½ teaspoon onion powder.
  4. Rub this seasoning mixture all over the outside of the chicken, ensuring it's well coated.

Step 3: Stuff and Truss the Chicken

  1. Loosely spoon the prepared rice and vegetable stuffing into the chicken's main cavity and neck cavity. Do NOT pack it tightly, as the rice needs space to expand, and overstuffing can prevent the chicken from cooking evenly and safely. (Any leftover stuffing can be baked separately in a small baking dish for the last 30 minutes of chicken cooking).
  2. Tuck the wing tips under the body of the chicken. If desired, truss the chicken legs together with kitchen twine. This helps the chicken cook more evenly and hold its shape.

Step 4: Roast the Chicken

  1. Preheat your oven to 200°C (400°F).
  2. Place the stuffed chicken, breast-side up, in a roasting pan (or on a roasting rack set in a pan).
  3. Roast for 15 minutes at 200°C (400°F).
  4. Reduce the oven temperature to 180°C (350°F). Continue roasting for another 1 to 1.5 hours, or until the chicken is golden brown and cooked through. Baste occasionally with pan juices if desired.

Step 5: Check Doneness & Rest

  1. The chicken is done when a meat thermometer inserted into the thickest part of the thigh (without touching bone) reads 74°C (165°F), AND the stuffing in the cavity also reaches 74°C (165°F).
  2. Once cooked, carefully remove the chicken from the oven and transfer it to a large cutting board.
  3. Crucially, tent the chicken loosely with aluminum foil and let it rest for 15-20 minutes before carving. This allows the juices to redistribute throughout the meat, ensuring a tender and juicy chicken. The stuffing will also continue to cook slightly during this time.

Step 6: Carve and Serve

  1. After resting, carefully remove the stuffing from the chicken cavity and transfer it to a serving bowl.
  2. Carve the chicken into pieces.
  3. Serve the Whole Roasted Chicken Stuffed with Savory Rice and Vegetables immediately, ensuring everyone gets a generous portion of both chicken and stuffing.

Extra Tips for Your Stuffed Chicken

  • Food Safety is Key: Always use a meat thermometer to ensure both the chicken (thickest part of the thigh) and the stuffing (deepest part of the cavity) reach a safe internal temperature of 74°C (165°F).
  • Don't Overstuff: Overstuffing can prevent proper cooking of both the chicken and the stuffing, leading to potential food safety issues and a dry, dense stuffing.
  • Crispy Skin: Patting the chicken very dry before seasoning is the most important step for crispy skin.
  • Other Stuffing Variations: Feel free to add diced apples, dried cranberries, pecans, or chestnuts to your stuffing mixture for different flavors and textures.
  • Alternative Chicken Pieces: You can adapt this concept for boneless, skinless chicken thighs or breasts. Cut a pocket into thicker pieces, stuff lightly, secure with toothpicks, then pan-sear or bake. Adjust cooking times accordingly.
