Crushed Tomatoes1 (28 oz / 794g) can
Beef or Vegetable Broth2 cups (480 ml)

Cooking Steps

Step 1: Prepare the Cabbage Leaves

  1. Remove any loose outer leaves from the cabbage head. Using a sharp knife, carefully cut out the core of the cabbage.

Step 3: Roll the Cabbage Rolls

  1. Lay a prepared cabbage leaf flat on a clean surface with the stem end pointing towards you.

  3. Fold the bottom edge of the leaf over the filling.
  4. Fold in the side edges towards the center.
  5. Starting from the bottom, roll the leaf tightly upwards towards the tip, forming a compact cylinder. Repeat with all remaining leaves and filling. (You may have some leftover inner cabbage leaves; chop them up for the bottom of the pot or save for another use).

  1. If using, scatter the cabbage trimmings and sliced onion at the bottom of your large, heavy-bottomed pot. This helps prevent scorching and adds flavor.
  2. Arrange the rolled cabbage rolls tightly in layers over the bottom layer. Pack them snugly to prevent them from unraveling during cooking.
  3. Prepare the sauce: In a separate bowl, whisk together the crushed tomatoes, beef or vegetable broth, water, tomato paste, sugar, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir well. If using, add the lemon juice.
  4. Pour the sauce evenly over the cabbage rolls in the pot. The liquid should almost cover the rolls. If it doesn't, add a little more water or broth.
  5. Place a heat-proof plate directly on top of the cabbage rolls. This helps keep them submerged and prevents them from unraveling during simmering.
  6. Bring the liquid to a boil over medium-high heat, then immediately reduce the heat to very low. Cover the pot tightly with a lid.
