Prosciutto e Funghi Pizza Recipe

The Pizza Prosciutto e Funghi is a beloved Italian classic that perfectly balances the rich, savory flavors of prosciutto with the earthy taste of mushrooms. Built on a base of tomato sauce and mozzarella, this pizza is simple yet elegant, making it a popular choice in pizzerias across Italy. Its harmonious blend of ingredients highlights the authentic beauty of traditional Italian cooking—fresh, wholesome, and full of flavor.

Ingredient

For the Base & Sauce:

Pizza Dough (12-inch round)1 lb (450g)
Simple Tomato Sauce½ cup (120ml)
Fresh Mozzarella6 ounces (170g)
For the Toppings:
Mushrooms (Cremini or Button)4 ounces (115g)
Beef Bresaola or Turkey Ham2 ounces (55g)
Garlic Clove1
Dried Oregano½ teaspoon
Extra Virgin Olive Oil1 tablespoon
Salt and Black PepperTo taste
Fresh Parsley or BasilFor garnish

Cooking Steps

Step 1: Prep the Mushrooms

  1. Heat the olive oil in a small pan over medium heat. Add the sliced mushrooms and garlic.
  2. Sauté for about 5-7 minutes until the mushrooms have released their moisture and started to brown. This prevents a watery pizza.
  3. Season lightly with salt and pepper. Set aside.

Step 2: Prep the Oven and Dough

  1. Place a pizza stone or steel on the top or middle rack. Preheat your oven to its highest setting (500-550°F / 260-290°C) for at least 30 minutes.
  2. Stretch the pizza dough into a 12-inch round and place it on a pizza peel or baking sheet dusted with cornmeal.

Step 3: Assemble and Bake

  1. Spread the tomato sauce evenly over the dough, leaving the crust exposed. Sprinkle the sauce with dried oregano.
  2. Scatter the prepared mushrooms and torn mozzarella pieces across the pizza.
  3. Slide the pizza onto the preheated stone/steel.
  4. Bake for 8-12 minutes, or until the crust is golden and the cheese is melted and bubbly.
  5. Remove the pizza from the oven. Immediately top with the thinly sliced pork-free meat (Bresaola or Turkey Ham). The heat from the pizza will gently warm and wilt the meat.
  6. Garnish with fresh parsley or basil, slice, and serve.
